Which steel is sharpest?

Most kitchen knives are made from a piece of steel, which typically has a hardness of around 54-55 HRC on the Rockwell scale.

VG10 core steel

Kitchen knives made of VG10 steel have become very popular because they require less maintenance than other Japanese steel types due to their stainless properties. With a kitchen knife made of VG10 steel, you don't have to worry about the knife becoming dull or rusty.

The knives typically have a hardness of 60-62 HRC on the Rockwell scale and are thus significantly sharper than typical kitchen knives.
