Green skewers with squash, halloumi and corn
Green skewers with squash, halloumi and corn are a perfect choice for the summer grill menu – either as a side dish or as a standalone dish. The dish is elevated by the grill oil – a blend of olive oil, garlic, lemon, honey and smoked paprika, which gives the skewers a lightly caramelised surface and a sweet, mildly spiced flavour.

Ingredients

squash
250–300 g
halloumi in large cubes
2 pcs
pre-cooked corn cobs
0.75 dl
olive oil
1 clove
garlic, grated
0.5
lemon – zest and juice thereof
2 tsp
honey
0.5 tsp
chili flakes
1 tsp
smoked paprika
1 tbsp
finely chopped oregano
Salt and freshly ground pepper
Avoid screen shutting off

Instructions

Step 1/4
Cut squash into coarse cubes and halloumi into large cubes. Divide the pre-cooked corn cobs into 4 pieces.
Step 2/4
Place the ingredients on skewers.
Step 3/4
Then mix all the ingredients for the grill oil together and brush the skewers while cooking on the griddle.
Step 4/4
Cook the skewers until they are golden and lightly caramelized.
