Indian Dhal with Homemade Flatbread
Dhal, dahl, dal, daal – a beloved dish has many names. This Indian dish is delightfully spiced, delicious and hearty, and it doesn't take long to make. It is best served with rice or, as here, with homemade flatbread or the traditional naan bread.

Ingredients

6 cloves
garlic

chopped tomatoes
juice of 1–2 limes
olive oil for frying

creme fraiche
1 bunch
fresh coriander
1 jar
pickled red onions

black sesame seeds

salted almonds
1 dl
water
1 dl
natural cultura yogurt
15 g
yeast
4.5 dl
wheat flour
1 tsp
salt
2 cloves
garlic
a handful of scallions, parsley or similar
oil for frying

Instructions

Flatbread
Step 1/3
Mix the yeast in the water and yogurt in a large mixing bowl – preferably use an electric mixer.
Step 2/3
Add flour and salt and stir the dough well together until it is smooth, but it should be neither too sticky nor too hard.
Step 3/3
Finally stir the pressed garlic and finely chopped herbs into the dough, cover the bowl and let it rise on the kitchen counter for 1 hour.
Dhal
Step 1/6
Chop the onions, chili and carrots finely and grate the garlic and ginger finely.
Step 2/6
Fry it (except for the carrots) well with olive oil in the cast iron pot until the onions become translucent.
Step 3/6
Add miso, garam masala and curry paste and let it fry for a couple of minutes until it is dissolved.
Step 4/6
Now add the carrots together with the lentils and let it fry for a couple of minutes.
Step 5/6
Add water, coconut milk and chopped tomatoes to the cast iron pot. Let it come to a boil and then reduce the heat slightly.
Step 6/6
Cover and let it simmer for approx. 30 minutes until it has a nice, creamy consistency. Stir gently every 5 minutes if you like.
Flatbread, continued
Step 1/2
Sprinkle flour on the table and divide the dough into 6 pieces.
Step 2/2
Roll them out with a rolling pin so they are approx. 0.5 cm thick and then fry them on both sides in oil in a frying pan.
Serving
Step 1/1
Stir lime juice into the dhal before serving and top it with creme fraiche, fresh coriander, pickled red onions, black sesame seeds, chopped salted almonds and of course with the delicious flatbread on the side.
