Luxury Cowboy Toast
Adam Price takes the classic cowboy toast to a whole new level with a juicy burger, soft caramelized onions, melted cheddar, homemade brioche and a creamy wild garlic mayo that brings it all together. The recipe is perfect on a griddle on the grill or over an open fire, where the cowboy toast gets that extra something you don't get on the stovetop - although the dish can of course also be made there.

large onions
Butter & oil for frying

Sherry vinegar

egg yolk

neutral oil

minced meat - in the video game is used, but can be replaced with beef

bacon
4 slices
brioche bread*
2 slices
cheddar cheese
Worcestershire sauce

Instructions

Soft caramelized onions
Step 1/3
Slice the onions very finely and fry them soft in a little butter-oil and butter.
Step 2/3
Salt, pepper and a little sugar – optionally a touch of vinegar for acidity.
Step 3/3
A splash of water will soften them a bit faster.
Wild garlic mayonnaise
Step 1/4
Whisk an egg yolk together with a little mustard, a little vinegar, salt and pepper.
Step 2/4
Whisk a decilitre of neutral tasting oil (grape seed or sunflower) into the mixture in a very thin stream, so the mayonnaise emulsifies.
Step 3/4
Switch to wild garlic oil and whisk the mayonnaise until finished. It should be a beautiful green and firm in consistency.

Chill it.
Game burgers
Step 1/2
Chop the bacon and massage it together with the minced meat.
Step 2/2
Season with a little salt and pepper.
Cowboy toast
Step 1/6
Toast the brioche bread on one side and set it ready with the toasted side up. Drizzle a little Worcestershire sauce on the bread.
Step 2/6
Fry the burgers medium rare. When you flip them for the first time, place a slice of cheese on top of the fried side. Put the lid on your griddle, so the cheese melts.

Spread wild garlic mayo on the brioche bread.
Step 4/6
Put soft caramelized onions on one bread and place a burger on the other.
Step 5/6
Close the cowboy toasts together and fry them finished in butter on the griddle. Be careful, it goes fast – brioche browns quickly.
Step 6/6
Serve with ice-cold cola or a beer. Watch your favorite western and leave the hangovers to your cowboy toast. Remember to have enough for another round if it's a long film – they are addictive.
