Poussins are simply small chickens, which look festive when served whole. Allow one poussin per hungry adult, and enjoy them for example with roasted potatoes or french fries and a green salad.

mixed herbs, such as sage, rosemary, thyme and parsley

soft butter

organic lemon

Salt and pepper

Instructions
Step 1/5
Pick and chop the herbs, and mix them with butter, salt and pepper.
Step 2/5
Halve the lemon.
Step 3/5
Rub the herb butter inside and outside the poussins.
Step 4/5
Cut the lemon into wedges, and put one lemon wedge in each poussin. Optionally tie the legs together with kitchen twine.
Step 5/5
Place the poussins in a small ovenproof dish, and roast them in the oven for approximately 40 minutes at 180 degrees fan/200 degrees conventional oven, until the poussins are cooked through.
